Sunday 6 April 19

Hi, friends.  I hope you are doing well and staying healthy.  These are certainly strange times for everyone.  I hope you have had and continue to have more good days than bad throughout all of this.  Know that you are doing a fantastic job on your remote-teaching adventure!  To the moms and dads out there that are suddenly working from home while continuing to teach your students: YOU ROCK and are a true inspiration.
  

We have been trying to keep our dinners simple...I am not much of a cook, because I am typically on my own for dinner.  My husband usually has client dinner appointments and I am left to fend for myself.  During the stay-at-home order, my hubby has been the one to grocery shop.  He goes out once a week and gets everything we need.  Because of this, I try to keep his grocery list simple and not include "weird things that he can't find" (as he would say!).  We've gotten into a groove with a few basic meals that we cook each week.  One of them is homemade pizza.  Back when we were in college, my husband worked at a pizza place and delivered pizza.  He would also help make the pizzas.  So naturally, "pizza night" during the quarantine is his gig.  Which I am totally fine with!  It gives me a night off from cooking.  His pizza is so good!  However, we never make homemade pizza!  Now that I know his skills are on-point, I think this will be added in as a weekly Friday or Saturday night meal (once the quarantine is over).

More wild weather in Ohio.  It was 80 a week and a half ago and earlier this week, it was below freezing with frost warnings.  One day last week, we even had a hail storm.  Bizarre!

On Easter Sunday, I made lasagna and forgot to have Mr. Wheeler get garlic bread at the store.  I improvised by using some almost-stale hamburger buns.  I brushed on some butter, added minced garlic, Parmesan cheese, and parsley.  It was YUMMY!!!  I've really learned how NOT to waste food during this pandemic.
